I just love walking around at airports. The buzz that goes around, people excited about the journey they are starting or just finished. I love to see totally stressed out parents chasing sleep-deprived kids around the restaurant and "join" the farewell of a couple in tears. There is no better place for secretly looking/spying around and observing people, their emotions and relationships than an airport.
Last month a new cafe has been opened at Amsterdam Schiphol Airport: The Fair Taste cafe. They claim to have:
"ensured sustainable materials were used in the store’s design. Wherever possible, recycled and repurposed materials were incorporated. The walls are made from reclaimed wood, pallets and tiles. Counter surfaces and tile are made from ground waste rock. (...) The vast majority of products available from Fair Taste Café satisfy at least one of the following qualities and hallmarks: Fair Trade, Organic, Local, Recyclable or Rainforest Alliance Certified."
And although airports and flying are at the top of the "pollution list", this cafe gives us a "sustainable" excuse to hang around a bit longer! I still have to check it out myself so I can't just yet tell you if the walls of reclaimed wood make eavesdropping any easier. So if youhave been there, please give us a heads up on this!
